Going down to Branson, MO

Last weekend we went to Branson to visit Cary's grandpa and grandma, plus her brother and his family. It was great fun to have a bunch of the cousins together playing outside and getting to see their great-grandparents. We also went to Silver Dollar City again - opting for the more laid back stuff this time (seeing some animals, watching the artisans work, etc).

Right when we walked in, Edwin put Matt to work cutting limbs off his tree; he watched the work from his porch to make sure Matt didn't slack off.

I had never seen some of the cool spaces on Grandpa Edwin's farm; this is the hay loft in the barn: the space was amazing and felt like a chapel.

Potty Training

Last week, I started putting Winifred in "big girl underwear" to see what would happen. She had an awesome first day, and okay second day, and rough third and fourth days. Then we went to Branson for the weekend, and she only had one accident at Matt and Michele's house and one accident at my Grandpa's house. Just like when we trained Puddy, an accident is our fault, because we just get caught up with what we are doing and don't think about potty breaks. Anyways, Winnie had a perfect day yesterday. No accidents! And, she even went poop on the toilet twice. We are going to celebrate by going to get some new big girl underwear today, because she only has a few pair. I am very proud of how well she's been doing! She's not yet perfected the ability to know when she needs to go, so I'm still prompting her. Sometimes, she will say, "Mommy, am I wearing a diaper?" and I know that she needs to go to the bathroom. That first photo showcases her new talent--a THUMBS UP. She knows that it means good job. Food Blog

My husband doesn't get food blogs. Partly, because he is not a foodie. Not even close. He always says that half of the internet is taken up by food photos taken by girls. I love food blogs, especially ones that are vegan or vegetarian-based! I am thankful that people cart their cameras around, capturing their 3 meals a day. I think it's interesting to see what people choose to eat and why. I love reading cookbooks, nutrition books, articles, etc. I try to be extremely thoughtful about what we eat. So, in honor of food blogs everywhere, here is a day in the life of the Murphy's and their food. Andy was at work, so he's left out for breakfast and lunch. I have tried doing this two other times, but had to delete it because I was trying to be fancy for the sake of the blog and wasn't being totally "real." This is an extremely typical day for us...

BREAKFAST
To start our day off, Winnie ALWAYS has a bowl of yogurt (spiked with either flaxseed or chia seeds) and Rush ALWAYS has a banana. Every single morning. So, this morning, we had homemade blueberry-strawberry whole wheat muffins, and Winnie had some yogurt, and Rush and I had a banana. HERE is the recipe for the muffins. These are great muffins and freeze/thaw well, so they are perfect for breakfasts. I always double the fruit, use all whole wheat flour, use turbinado instead of white sugar, add flaxeed meal, and add a little milk to cut the density that I create with the ww flour and flax. You can ALWAYS make things a little healthier if you want to.

LUNCH
This is Winnie's plate. I forgot to photo until halfway through the lunch. We love our quesadillas! This is a organic white cheddar/grated zucchini quesadilla made with whole wheat tortillas (the organic ones from Whole Foods--my favorite tortillas ever). Winnie is a little picky, so I grate zucchini (when peeled, it is virtually colorless) and mix it with the cheese. On the side are two of her favorites, sweet potato chunks and organic strawberries.

Here is little Rush's tray. He has the same quesadillas and sweet potatoes. And, my late photo didn't capture the green beans he ate. He is so good about eating his green veggies. I tried again to get him to eat blueberries. He doesn't like any berries. (He'll eat them in muffins, pancakes, etc. though, so I'm thankful for that.) The only fruit he'll eat are bananas, apples, and pears. So, these 5 berries were left on his tray.

My beautiful lunch. This, or a variation of this, is what I eat lunch almost every day. And often dinner, too. A salad with romaine lettuce, spinach leaves, red onion, red pepper, diced celery, avocado, chickpeas, a little honey, some garlic powder, and topped with crispy tofu. Delicious! I get very excited about lunch, because it is the only meal I can eat in peace and quiet by myself. So my lunches are always BIG and beautiful.

SNACK
Rush and Winnie have snack when Rush wakes up from his nap, usually around 3:00/3:30. This is their shared plate. Today, they had some Kashi Cinnamon Harvest (SO GOOD!) squares and a cheese slices.

SUPPER
There are only a handful of entrees that Andy (meat and potatoes, no fruits or veggies) and I (vegetarian, no fried foods, loves all fruits and veggies) will eat together. One thing we love is this lasagna. It is from the St. Louis Art Museum Cookbook and is called Chicken & Cheese Lasagna. It is a funny thing to cut into because I have to be strategic when I make it...a big portion on the left with chicken and no spinach, and big portion on the right with no chicken and extra spinach, and a "demilitarized zone" in the middle with no chicken or spinach (for Winnie). Got that? That is my life. We are all picky! But, the lasagna is delicious. This is a photo of my plate. Rush and I had naked, steamed broccoli on the side. Winnie had canned pears on the side. Andy had no side, except for the bread we all shared. I always get the Schnucks Bakery Whole Wheat Mini Loaf, but this evening, I had grabbed the wrong one at the store. This was a Sweet Mini Loaf, and I didn't like it. I thought it might taste like that King Hawaiian bread, but it didn't. Bummer. I didn't photo my nighttime snack and can't remember what I would've eaten. I eat a snack almost every night. Maybe I didn't this evening because dinner was so heavy? Surely I did, because it was Wednesday, which means it was a Top Chef night. That show always makes me hungry. Maybe it was Kashi Cinnamon Harvest and soymilk. That seems right.
Well, there it is! Maybe in a few months, I will do this again.

Happy Birthday, AL!

Clearly, one of our favorite little guys is the ever-popular Albert. He turned 2, and we headed down to Washington, MO for his party at his grandparent's house. It was a HOT day, but the party was perfect because it was complete with watermelon, water games, baby pools, a sand box, slides, and a swing. Winnie was looking forward to this party for days...she made Al a card and wanted to wear her "Sonya dress" (which is her long, maxi dress just like her friend Sonya wears) Because of traffic, it took us forever to get there, and the whole time she was saying, "We're coming Albert! We're coming Grandma Linda!" The party was worth the wait. Happy birthday, Albert!

Cape Cod


Andy's parents have a beautiful house in Chatham, MA. We joined the rest of the Murphy family last week for four days in Cape Cod and had a great time. The time went by quickly, but we packed a lot of fun in those few days...
